While traveling on the West Coast of the US, I absolutely fell in love with the hoppy pale ales that they are brewing in cities like San Diego, San Fran and Seattle. So, I immediately got to work on my interpretation of this Style. We use Canadian two row barley and a very liberal helping of Chinook hops. Hope you enjoy.

    Clear amber/yellow colour with a small off white head that quickly dissipates. No lacing. Seems more like a pale ale with a bit of a hop flavour. Average all round.

    6-pack at the LCBO. Pours a clean light amber colour with an off-white frothy head that has great retention and bubbly lacing. Nice mild floral hop nose with a little roasted malts. After breathing a bit, some caramel notes appear. The grapefruit hoppiness is present in the taste as well, and still on the mild side. Some grain shows up in the aftertaste well-blended with the smooth bitterness. A pretty refreshing Pale Ale that has a bit of a hoppy bite. Very easy-going and would have again.

    This beer was a pleasant surprise. The beer is clear, reddish in colour, and has a decent tannish head. The aroma is floral hops, with some maltiness in the mix. The flavour is citrusy hops, and grainy malt, all nicely balanced.

    I tried this beer on January 10, 2008 at "Smokeless Joe's" in Toronto. The beer poured a hazy orange-gold colour with a thin white head. The aroma was very hoppy with perfumy and citrusy tones. The mouthfeel was medium-bodied with medium to high carbonation. The flavour was definitely strong on the hops with a definite grapefruit flavour. A nice bitter finish.

    On Tap at the Castle Tapped a lush dark orange with a sticky rich 3 finger cap that laces well. Rich juicy citrus (Grapefruit) and floral tones over copious toffee- bready malts. This is a luxurious ale in the mouth, silken, rich, dripping with Cascade hop cone citrus and balanced with sweet malts with a woody-earthy under tone...finish is profuse...bloody marvelous...the best IPA in this Ontario market hands down.
