La cervoise, ancêtre de la bière, légèrement ambrée, tire ses caractétistiques des malts légèrement plus torréfiés que la blonde, d'un soupcon de houblon de Bavière pour en affirmer le goût et d'un peu de miel. Laissée en cuve de garde pendant 6 à 8 semaines, elle est parfaite à consommer dès sa mise en bouteille. Elle porte le nom de GUEDELON, chantier médiéval en construction dans l'Yonne, dont elle est la boisson exclusive. Elle a été crée pour satisfaire leurs exigences d'authenticité.

    330 ml bottle. Poured in the brewery Chant du Loup glass a hazy golden orange colored ale with a two fingers white foamy head that had a good retention. The bottle " exploded " at the opening! Active carbonation. Great lacing. The aroma is sourish/aciditic fruits, barnyard. The flavour is a sweety / sourish mix,aciditic fruits, green apples, citrus, grapefruit. The mouthfeel is fizzy. This light bodied ale has a dry sourish finish. More in the style of a gueuze or a cider as a " cervoise".
