Nous sommes particulièrement fiers de vous présenter Terra Gallia, une Saison d'épeautre affinée sous bois. Terra Gallia a été fermenté en inox puis a séjourné pendant 12 mois en barrique de vin blanc avec notre culture. Ensuite, nous avons laissé lentement Terra Gallia s'affinée en bouteille pendant 6 mois afin d'obtenir davantage de raffinement. Les arômes de Terra Gallia évoque le citron, la pêche et les fruits à noyau avec une touche de vin blanc ainsi que des notes de foin. En bouche, vous y trouverez des notes d'agrumes avec une pointe d'acidité rafraîchissante et des bulles bien agréables issues d'une refermentation naturelle en bouteille. Cette bière pourra se bonifier pendant quelques mois en bouteille.

    Lightly hazed, light-golden colour, somewhat unfiltered with a few tiny particles floating around. A nice white head that is frothy, lasting a little while, but leaving a thick, foamy-soapy lacing. Tiny bubble carbonation that is Champagne-like. Funky-Brett aromas with mild earthiness, sourness, with the Saison yeast, citrusy notes and a touch of vinous white wine. More fruits in the taste, as some peachiness, tropical fruits, but not on the sweet side, with a tad herbal-bitterness that cuts the richness, blending with lemon zest. Light sourness, tartiness. Not as wine-like in the flavours, with some touches coming out in the lingering process, with a Champagne-apple aspect. All-around, a nicely brewed Saison with funkiness, a bit of white wine and lots more going on.
