A Honey of a Saison is a swarm of flavor and a stinger at 11.5% ABV. The French Saison yeast produces big, estery, phenolic aromas and flavors, while the Wildflower Honey lends a spicy, sweet aroma with essence of dried fruits. Champagne Yeast is also used to complete fermentation and create a dry finish. A strong malt bill imparts a rich, golden honey color to the ale, and it shows low hop bitterness at 25 IBU’s. Comes out of the growler a clear, bubbly, slightly reddish dark amber, bordering on mahogany, with a thick and fluffy ivory head. Aroma is mainly yeasty with a little sweet malt. Flavor is fairly strong, if not complex - yeast, malt, honey, a hint of apple. Texture has average fizz and body. If not one of those really outstanding beers, certainly worthy of a try. Definitely for sipping slowly on a hot summer day while watching the home team hand their arch-rivals their own a--es.

Big n meaty, more like a mead than a traditional saison, like I thought it'd be...but also with a belgian spice that played nicely with the flowery honey. Sweet, but with a lot going on. I'd get again.

A crystalline clear amber colored beer with a big sudsy texture, white head. There's some hang time. Settles into a moderate ringlet and some film. Wheaty nose. Grapes and sweet honey in the tasting. Not as pleasant as I'd hope for, but the light, medicinal slick bodied beer is drinkable
