For the Saison Tropicale we used a good amount of Rye and Oats to improve the mouthfeel and complexity of the spicyness of the Saison yeast. We adjusted the water with 5 mineral salts to accentuate the flavours we wanted. Finally we dry hopped the beer with juicy & fruity hops. This beer is quite dry however the mouthfeel is quite pleasant because of our grain bill strategy. Tastes and aroma of cantaloupe, pineapple, passion fruit, lychee and guava fill your mouth and nose all culminating with a refreshing, spicy and slightly tart finish.

Pours a cloudy golden colour with an orange hue. The foamy warm cap foams away slowly leaving some thick foam lace. Aromas of nice fresh grassy hops, tropical fruits and mild Belgian Ale yeast sweetness. Citrus notes (oranges) in the taste to balance with the tropical notes. Feels like a nice breakfast alcoholic beverage. This is quite nice all-around. A hoppier Saison which is expected from Beyond the Pale.

On tap at Craft Beer Ottawa. Pours a large frothy white head that dissipates to a thin coating and has a hazy golden orangey appearance. Thick sticky lacing. Aromas of grapefruit, oranges, pineapple, very citrusy. Flavours are quite citrusy and fruity, lots of tropical fruit notes (banana, pineeapple). Some subtle notes of cloves and Belgian yeast. Great retention. Very yummy.
