This beer is fermented with wild yeast and bacteria. Belgian breweries typically open their windows and allow the airborne wild yeasts and bacteria to ferment the wort. Poured a cloudy pinkish color with a small white head, which eventually diminished to a ring around the edges. Funky sour, light horseblanket, and dark fruits in the aroma. Acidic, tart plum, and lemon in the taste, with some mild carbonation. This was not a bad lambic, especially considering it was made in the US. Could have been a little more over the top, but I am not complaining.
