Some things just can’t grow this far north. The long winters and hot, dry summers call for a natural fortitude that’s hard to come by. Indigenous to our province, the Black Spruce tree can tell you everything you need to know about how some things survive in Alberta. Sure, it grows well even in rocky soil and features a sturdy trunk and thick needles. But there’s something else even more essential: It’s got to have character if it’s going to make it out here. The Black Spruce Porter is a dark beer that stands apart. It displays robust flavours of fine roasted coffee, dark chocolate, molasses and cacao up front, showing intense maltiness that’s rounded out by sweeter hints of raisin and plum. The addition of earthy, herbal and floral hops acts as a counterbalance to the malt in terms of flavour and aroma. And brighter peach and dried fruit yeast flavours mix together to create a full-bodied, drinkable porter you could pair with grilled bison for dinner, and chocolate cheesecake for dessert.
