We chose to collaborate with Birrificio del Ducato, an award-winning craft brewery located in Parma, Italy known for using natural and local ingredients. Appropriately named for the shape of Louisiana and Italy, Two Boots is a Saison brewed with peppercorns, lemon balm and honey. This beer uses pilsner and wheat malts and is hopped with German Perle hops. We used raw honey from a local producer, Blood River Honey, to give the brew a very dry finish perfect for a Saison. The addition of the lemon balm, green and pink peppercorns enhance the overall flavor of the brew. The honey is added in the brewhouse at the end of the boil and the lemon balm and peppercorns are added in the aging tank. The result is a very balanced beer with the flavors of the malted barley, wheat, hops, yeast, herbs and honey all blended together for a refreshing brew.

    Pours clear golden with a fairly thick but effervescent yellow-tinged ivory head. Strong aroma has fruity, yeasty, and shy butterscotch tones. Flavor seems bold for a saison, mainly pear and banana with pillars of yeast and malt supporting it plus bits of butterscotch and hops. Mouthfeel has good body if not a lot of fizz. These two boots were made for drinkin’!

    A murky yellow colored beer with a big sudsy textured, white head rising above. There's good hang time on that head. It settles in thick fluffs of film and moderate ringlet. A vinegary nose Interesting blending of light peppers, more upfront honey and lemon. Light, clean crispness.
