Our first of what we hope to be many bottle conditioned beers! Using all local Arizona grains, Sinagua barley combined with a blend of Grain R&D’s Blue Beard Duram and Farro for a crisper, yet balanced full body for the style. Utilizing aged Summit hops in frequent low quantities to pull their herbal and peppery flavors, alongside Saaz in both the whirlpool and a subtle dry hop bringing a classic aroma to complement the Summit. 100% 'clean' fermentation in uncapped stainless using a new fairly high attenuating yeast at high temps to achieve a drier profile with familiar saison yeast characteristics, and a welcome addition of a subtle sweet tropical aroma.
