Ours is a distinctively Canadian IPA that combines the citrus and floral hop aroma of American IPAs with the sweetness, body and finish of British-style India Pale Ales, favouring a good hoppy flavour over bitterness. It delivers the body you expect from India Pale Ale, without making a spectacle of itself. Pour this boar down the side of your glass to avoid too creamy a head – a finger's width is bang on. Emphasizing hop flavour and aroma over bitterness, Waterloo IPA is perfectly paired with foods that have a bit of a spicy kick. The hoppiness goes nicely with Thai or Indian dishes, especially those with sweet and sour or peanut sauces and fresh cilantro. Order the Pad Thai or a good curry and you're off to the races.

Dark copper colour pour with not much head but it does stick around. Some hops in the aroma but not much else. Very earthy flavour with a little malt sweetness. Not much of a fan of Brick Brewing and this one did not help change my mind.

Pours a thick frothy cap and has a golden light amber appearance. Sort of rusty looking. Thick dirty lacing. Aromas of citrus and herbal hops and some sweet malts. Sort of has a metallic like taste as well as earthy hops, caramel and toffee malts notes. Fairly bitter mouthfeel, but still a good balance between sweetness and bitterness.

Purchased at the LCBO in a Waterloo Seasonal Collection Mixer 6-pack. Pours a slightly hazy rich amber colour with a big frothy off-white head that last quite a long time and creates real good lacing. Caramel malt aromas with notes of toffee and the hop is present, but not strong like a traditional English IPA. Crisp mouthfeel, refreshing, and medium-light bodied. The sweetness from the caramel malt is nicely cut-off with some mild bitterness and hints of grass (found in the finish). Pretty mild overall and not a punch-in-the-face IPA, but much better than most Brick products.
