A fruity and Funky Farmhouse Brett Ale made with a custom mix of 5 different yeasts and a touch of Rye. The unique yeast cultures used provide a depth of complexity and layering that really showcase what yeast can bring to a beer. We use throw 5 different yeasts in our propagator for this one, 5! 2 of them are funky saison Sachs, 1 is a fruity Brett, one is our environmental isolate Brett and the 5th yeast is an environmental isolate Sach found on a ground cherry in Alymer.
