A coppered yellow American IPA fermented with a mixed culture including Brett to have a truly complex tropical aroma and taste. Malt is slightly subdued to really let the hops and fermentation characters shine. We play with this beer quite a bit, so stay tuned to see the different variations! We really wanted to get a big bold fermentation profile out of this beer to develop a unique balance focused on the yeast-hop interaction and bio-modification. We use a "Brett-like" yeast to get that unique dimension. This recipe is the first time I venture away from the comfort of brewer’s yeast in into the fascinating world of wild yeasts. To make the transition I opted to using a mixed primary fermentation culture containing Brett, a "semi-domesticated" wild yest to have predictable results with some wild characteristics. Enjoy! Enjoyed at the Hooch on my first visit there. Pours a golden colour with a white cap and small lacing. Decent hop aromas with mild grain. Same for the taste with a nice balance between grassy hops and the cereal grain. Nice bitterness. An easy-drinking IPA that is still above bitter, without being a hopbomb.

On tap at Arrow and Loon. Pours a pretty good size frothy off-white head and has a golden amber appearance. Nice dirty lacing. Aromas of citrus hops, quite fruity, notes of coriander and some bready malts. Somewhat of a drying mouthfeel. Flavours are very citrusy, lots of fruity notes. A little bit of tartiness in the finish. Lively carbonation. Pretty good. Also tried "Simcoe" version: Pours a small frothy off-white head but doesn't stay long. Has a slightly hazy golden amber appearance. Lacing is not bad. Aromas are quite fruity, notes of tropical fruit, floral hops. Flavours are mainly tropical type fruits, mangos, oranges. Mostly citrus and herbal hops. Has a little bit of sourness in the finish, very subtle but still quite noticeable possibly from the type of hop used in this variation of Blind Pig IPA. Excessive carbonation. Slick and smooth medium bodied mouthfeel. Good but prefer original version.
