Macerate is our series of saisons focused on fresh fruit and beer co-fermentations, and the beauty that comes from the harmonious blend. Series No. 1 features fresh Santa Rosa plums from Larken Farms in Waxahachie, TX. We carbonically macerated 240 pounds of fresh plums in stainless, a technique used to capture the fresh and fruity aromas and flavors of the fruit. This allows the yeast naturally present on the skins to make a contribution to the overall fermentation complexity. We then blended onto the fruit, allowing for refermentation and conditioning. Juicy, ripe notes of plum with hints of bubblegum, strawberry, and herbs round out the flavor with soft tannins and a dry finish. It’s fancy beer simply made to be enjoyed unpretentiously.
