The second of our “Melancholia &...” series of wild beers in which we thoughtfully blend Melancholia, our fresh hoppy spelt and rye Saison with something special from our funky barrel cellar. This rendition is a blend of fresh, briefly oak fermented Melancholia and mature oak fermented Witbier. Unique restrained impressions of crisp apple and fermented fruit. Bottled-conditioned for roughly 2 years

Pours hazy papaya with a fair eggshell head. Aroma surrenders peach, citrus, smoky tones. Flavor delivers sweet peach, tart citrus & charred hops. Texture yields nice body & peppy fizz. Be neither melancholy nor apathetic.
