The thirteenth hour is the witching hour and refers to the mysterious combination of flavors in this brew. We've combined the roasted chocolate and coffee flavors of a stout with the spicy character of a Belgian ale aged in oak. The combination of 7 different malts creates a brilliant black brew that's full bodied and smooth with rich notes of coffee, chocolate, and dark fruits like raisins and plums. The dark roasty, and slightly sweet flavors of a stout are blended with the unique, spicy and sour character of our Kosmic Mother Funk (KMF), an ale that's been aged in oak tuns for up to a year. The KMF gives the beer an added complexity with notes of black pepper, oak, vanilla, and a hint of acidity. Enjoy this beer now or age it to further develop unique flavors. We recommend pouring the beer gently into a traditional glass. Take care not to unsettle the fine layer of yeast that rests at the bottom from the bottle-conditioning, a process which creates an extra smooth and balanced flavor in the beer. ---- Samuel Adams Thirteenth Hour is a complex blend of 13 ingredients. We use seven different specialty malts to give the beer its smooth, rich and roasty maltiness. These traditional flavors of a full-bodied stout have a slight sweetness that is balanced by the unexpected flavors of Kosmic Mother Funk (KMF). KMF gives the beer a layer of complexity and flavor with hints of oak, peppery spice, dark fruit, and a hint of acidity. Kosmic Mother Funk is an ale that we age in large oak tuns for over 12 months. The beer in the oak vessels undergoes a secondary fermentation to give the beer a rich tropical fruit note and some sourness. The beer is also bottle conditioned which creates another fermentation giving the beer an extra smooth and balanced flavor ---- A Belgian stout is not a traditional beer style, but rather a combination of influences and inspiration from our brewers. One of our brewers’ favorite places to experiment is our Boston Brewery. It's here that we first started to experiment with barrel aging many years ago and where we began exploring the ancient brewing techniques of Belgium. Belgian beers are known for the distinctive character of their yeasts and the practice of aging and blending beers. Belgian yeasts present a wide array of flavors that range from spicy and herbal to floral and fruity. These flavors are developed and matured through a process of blending and aging portions of the beers in wooden tuns. We were inspired by this technique and began experimenting in our own barrel room. The unique flavors that resulted in KMF were also a source of inspiration. The complexity and tartness of the beer lent itself as a counterpoint to the dark and roasted character of a stout. The richness and bitterness of the dark chocolate and coffee notes of a stout come together with the acidity of KMF and its earthy oak character and hints of vanilla. The result is a combination of smooth dark richness and spicy complexity for an entirely unique and bewitching brew. ---- Flavor: A combination of chocolate and cherries with hints of raisin, rum, and oak and notes of spice and dark fruit Color: Brilliant black, 70 SRM Original Gravity: 21° Plato Alcohol by Vol/Wt: 9.0%ABV – 7.0%ABW Calories/12 oz.: 290 IBUs: 17 Malt Varieties: Samuel Adams two-row pale malt blend, Caramel 60, Munich 10, Special B, and Carafa III Hop Variety: Hallertau Mittelfrueh Noble hops Special Ingredients: Two brewing sugars and Kosmic Mother Funk Yeast Strain: Belgian-style ale yeast and bottle conditioned with champagne yeast Availability: Year round First Brewed: 2011

Part of the Barrel Room Collection at the LCBO. Pours a dark brown colour, looking like cola. Beige head is creamy, has good retention and thick creamy lace. Mild aromas of chocolate and roasted malts. Also, yeast and maybe wheat giving out banana notes. Hints of alcohol. The taste starts off sour, so not sure if suppose to be this way, or infected (never had one of those from this good brewer). You can also taste some burnt malts (smokey oak) and light spices. I think the sourness took over the coffee, as I cannot detect any. A disappointing finish to the trio.

Pours think and black like a stout should. Taste is average but just a little to bitter but not over bearing. It also seemed to become more bitter the warmer it became. My suggestion drink it while it's cold.

Ruby blackish pour, tight tan head, nice lacing. Roasted malt and cocoa aroma upfront, then cherries and ripe fruits, some molasses, some FUNK and sour tartness, a touch of oak woodsiness. Flavor gathers more sour as it warms, with a sourish cherry taste, some oak and woodsiness, chocolate, roasted malts, sourwood honey. More sour for me than the Stony Brook Red! This is worthy as it is interestingly stout/sour/Belgian hybrid.

pours a pitch black overall with a bit of amber around the edges and with a medium sized head that settle to a lingering small head. The aroma is light malts, light coffee, a hint of tropical fruit. The taste is quite sour overall with some light malts, a hint of coffee but the overall flavor is sour citrus/tropical fruits, almost overwhelmingly so. The mouthfeel is fairly light-bodied and quite acidic. To be fair must point out that I hate coffee and not a big fan of stouts and porters.

Interesting belgian-ish style stout. Has elements of a stout and a Belgian...light roast, chocolate, dark fruit and spice. The x factor here is Sam Adams special yeast, causing juuuust a bit of twang in the aroma and flavor, and adding a unique level of tart apple like complexity.

Sampled on 10/6/2012. This Imperial Stout pours an eclipse black color from a corked and caged 750ml bottle. Medium sized beige foamy head with decent retention and nice lacing. The aroma is chocolate, coffee, roasty malts and yeasty. A medium bodied Imperial Stout. The malts are choclate and coffee, fruity and sweet. The hops are herbal and earthy. Lively carbonation. Yeasty and spicy. Hints of oak and chocolate. A nice combination of flavors, from the coffee bitterness to the yeasty esters and the oakiness. Hides the alcohol well. Mouthfeel is full and round. Finish is clean and crisp. Aftertaste is slightly bitter.

Very interesting Belgian Stout, well crafted and thoroughly enjoyable. Dark brown color with a thick tan head and supple lacing. A very assertive Belgian yeast character is present throughout this beer and provides lots of raisin and berry accents. Spicy and very fruity to compliment the hearty roasted malt content. Medium bodied, clean and easy to sip on. Not a whole lot of Imperial Stout influence, but interestingly enough to straddle between a Stout, Dubbel, and Quadrupel. Very enjoyable.

Pours opaque black with a thick light brown head that has great retention until a few sips in. It doesn't leave much lacing. The smell is sweet and spicy with earthy and herbal tones. It has some peat smoke with a well-blended touch of coffee and chocolate. It has a "Belgian"character meshed with a traditional strong stout. The taste is of peat smoke with sweet, sour and spice. The base is of vanilla/oak with coffee and chocolate. The sour character is strong, but tamed enough to let bittersweet notes in it to come out. Chocolate, coffee and herbal spiciness come through. Alcohol, while noticeable, is dangerously well-covered. The finish is reasonably long.It is full-bodied with a silky/creamy feel that is not thick. This is a complex stout with quite a bit of character.

Although it pops like champagne when you open it (watch for flying corks!) it doesn't fizz like nobody's business. It pours a deep, warm, opaque sable with a rather typical tan head that doesn't stick around too long. Smoky aroma has a strong fruity overtone, mainly apple and pear with a hint of banana, and earthy and miso touches. Flavor has a malty core with subtle nutty, earthy, molasses, fruity, roast coffee and chocolate notes. It tastes like a good Belgian style ale blended with a stout, and the different aspects of these two styles marry well. Smooth, edgy texture has above-average body and leaves a nutty, earthy, smoky finish.
