May 2013 release 5.4% The recipe for Amarillo Hefe came from a beer I developed for my sister and brother in law's wedding. They wanted a hefeweizen for their reception, and I decided to put my own twist on it. Since some people like to put lemon or orange slices in hefes, I figured I could replace that with the bright citrus flavor and aroma of Amarillo hops. The base beer starts as a fairly traditional Hefe. As fermentation starts to putter out, a healthy dose of Amarillos are dry hopped to complement the banana and clove flavors of the yeast. The balance gives an impression of added spice flavor, but no spice was added. Just malt, hops, yeast, and water. Enjoy! May 2015 Release 5.5% The base beer starts as a fairly traditional Hefe. It pours a hazy straw yellow with a fluffy white head about two fingers thick that slowly fades to a thin lacing over the top of the beer. The smell up front is mostly hops with a touch of banana and clove. It is definitely more hoppy then a standard hefeweizen. The hops provide a profile of grapefruit and citrus. The taste is very yeasty and bready. Typical hefeweizen flavors with a slightly more assertive bitterness. The beer is light bodied with high carbonation and a nice dry finish. Overall I like this beer, a hopped up hefe, not too shabby..
