This Texas Farmhouse Ale is a traditional Wallonian-style saison brewed with spelt that has been smoked over 4 Texas fruit woods. The use of peach, apricot, apple and plum woods add a subtle smokiness and light fruit texture to the earthy-sweet spelt, and marries well with the complexities of the Belgian farmhouse yeast. Earthy, peppery spice, herbal notes, soft ripe fruitiness and light smoke phenols come from fermenting at high temperatures and create a deep, refreshing character. Highly attenuated for a quenching dryness, this traditional saison is an esoteric seasonal that’s made for the Texas summer months.

Aromas of wheat, sweet candi sugar, and yeast, some light smoke is present. Nice deep dark hazy yellow body with a thick pillowy head that is disappating slowly, leavind some decent lace. Mouthfeel is thick and chewy for this style, smooth with a slight carbonation bite. flavor is a mix of smoke and yeasts, kinda peat like, alcohol on the backside.

a saison with smoked malts!?! .. fuck ya i'm in!!. .. getting mostly light smoke, wheat and a touch of yeast .. . fizzy as a soda .. . clean, light mouth .. . medium finish .. an interesting experiment, i like this!! .. . i used google..
