Our Optimal Wit is brewed in the Belgian Wit Bier tradition. It is brewed with raw wheat and oats, and steeped with coriander, orange peel and grains of paradise. This ale is a pale golden color with a bit of cloudy haze from bottle conditioning. This unfiltered ale offers layers of complex, nuanced flavors that evolve in the glass. It finishes crisp and refreshes the palate.

    Can from LCBO. Pours an average size foamy white head that dissipates to a thin coating. Has a very pale golden appearance. Decent sticky lacing. Aromas of wheats, yeast, floral and citrus hops. Flavours are sweet, wheaty, some tropical fruit notes, cloves, coriander, bananas, hints of yeast. Somewhat of a fizzy mouthfeel but also a little bit watery. Ok.

    This witbier has grains of paradise on top of the peel of Spanish oranges and coriander. It pours a very light golden-yellow colour with a white cap, average retention and lacing. Aromas are pretty mild with maybe Belgian Ale yeast and citrus. The taste is also very mild with lets say these two last listed ingredients. It is not bad, but so lacking punchiness. It feels like a session witbier. Gets a tad better at the last pour, but still, nothing to save this. If you want to chug a real easy-going white beer, this might be for you. I love this style, and this way too light. Where are these grains of paradise ??

    Pours slightly hazy golden with a thick but effervescent head. Aroma delivers yeasty, wheat, citrus and coriander notes, calling for a taste. Flavor ramps these all up a notch, especially the coriander, and adds a hint of pear. Fizz is lacking, but body is firm and smooth. Sharpen your wits to the optimal point and enjoy.

    Hazy, sunny yellow with a lace doily spread across the top. The spice in the nose is just right: inviting and warm scents of coriander and ginger that aren't overbearing, a little tart lemon, sweet apple, and bitter orange. The flavor also has that apple (and maybe a touch of banana) sweetness balanced with yeast & spice bitterness; it's warming, a little boozy. Really fine and light carbonation, light and refreshing, a little sticky.

    I love the cloudy look of this beer. Belgium beer is always a good second for me after Stout/Porter. Nice orange tones with some spice. This is a pleasant light, thirst-quenching beer. Would go well with frites!

    This one courtesy of the FoamDome himself: bright and slightly cloudy golden yellow pour with a thinning white head leaving some sporadic chunks of lacing. Slightly funky aromas, not unlike some Saisons, of malts, orange, spices, barnyard yeasties. Taste is cleaner than the aroma with a crisp malty and wheat base, citrus orange and lemons, some spiciness, very very refreshing - could drink this all day during this hot weather. Big thanks Dave for consummating our trade. Winner! from this upstart brewery. Can't wait to try the rest of their offerings.

    Pours light yellow with a thin white head. Aroma is floral, mouthfeel is lightly hopped backed by sweet. Flavor is light but very nice, good citrusy zest with a clean finish. Very nice looking forward to more.
