http://atlantabeermaster.com/peak-gets-a-little-german/ The 3rd edition in Peak Organic Brewing’s 2011 bomber series will be an imperial German Hefeweizen. This is the first hefe by the Portland, Maine based brewer. Both the hops and malts in Peak’s beers are 100% USDA organic. Label: Weiss Principal is the international love child of a German Hefe-Weisse and an American Double IPA. This unfiltered wheat beer employs a traditional German Weiss yeast, providing engaging banana and clove flavors. A stern dry-hopping of a pungent American hops provides pronounced citrus, pine & fruit notes. Weiss Principal will be available in 22oz bombers & draft. Arrival: June, 2010

Gold foiled bomber, . . . and just a moment . . . yes, it is a foiled twist off bomber (wtf), pours brilliantly clear copper with nice off white head. OK 8.6% Hefe? Here goes. The aroma is a mix of pulsing spicy hops, smooth sweet banana, some pear and a bit of booze. Not so bad. I was expecting a punishing sweet estery onslaught. The taste is refreshingly not what I was expecting at all. There are firm notes of sweet banana, apple and pear but those notes are tamed by bold spicy hops, resiny bitter pine hops and some herbal green grassy hops. This beer achieves a pleasing balance between imperial hefe and IIPA that is working very well for me. It has bold brash flavors all in the right places. Easily my highest rated Peak Organic beer. Another mark of a good beer is that the more I drink the more I like it. Well done!

    22oz bottle thanks to AirForceHops
Appearance: Pours slightly hazy golden with a big creamy white head and lots of sticky lacing
Aroma: Wheat, yeast, clove, citrus and spices
Taste: Sweet malts, citrus, spices, hot alcohols with a bitter finish
Ok. The sweetness and alcohols took over and covered up a usually light and refreshing beer.

Tis was more like an IPA than a Hefeweizen, at least in tasting. A exceedingly cloudy orange-brown color. A moderate frothy textured, white head rises briefly above. It settles into a thin ringlet with soarse blotches of film. The nose is dank and some clove. The tasting is an intense citric hop presence. Medium to full bodied.
