When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do it's thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Hazy, dark golden color. Small white head. Bubbly. Yeasty aroma with lightly baked bread, apples, lemons and barnyard funk. Taste is light malt, barnyard funk, mild citrus and apples with hints of bananas, cloves and coriander. Highly carbonated, but more like champagne than a beer. Very refreshing. Very enjoyable. I will revisit this one.

Color is hazy, light orange with a fine ring of a head. Lightly fruity and malty aroma is pretty standard fare for a saison. Lightly yeasty/bread flavor. Smooth to the pallette and finish.

Comes out of he tap hazy apricot with a thick, fine-bubbled eggshell head. Aroma is not strong but tempts with fruity and subtle malty tones. Flavor is mainly fruity, notes of pear and apple and a bit of banana, plus a little yeast. Texture is firm and smooth, while fizz is rather sharp but not persistent. Sit back and roar for one.
