Brewed in the tradition of the Lambics of Belgium but using a blend of Ale Yeast, Brettanomyces, Lactobacillus, Pediococcus, and Acetobacter. These microorganisms came from our culture collection as well as many collected by Dan around the wilds of Wisconsin! Fermented and aged in Oak. This beer spent the summer of 2009 aging outdoors in used oak barrels. Then bottle fermented. This is a funky and very sour beer not for the faint of heart. If you are unfamiliar with sour or Brettanomyces beers you may want to pass this one up!

    Courtesy of BOLTZ7555. It pours brilliantly clear gold with thin white head. The aroma is smooth sweet apples and apricot as well as delivering some sugary notes and then moving more toward saltiness and a thin ribbon of sea shore. The taste has an initial pulse of tartness and then moves quickly into a bit of salt, a brine sense, a mild level of apple and pear fruitiness. Behind those notes is a touch of sort of white wine fruitiness and dryness. These notes all play wonderfully together.

    2nd bottle of the R&D set I received from pfoxyjohn...thanks again for this grand surprise. All in all a very nice attempt at this traditional style, but it doesn't quite hold up to the authentic brewers that I have sampled so far. Beautiful vibrant pour, mild wild nose, dry and refreshingly tart, with an interesting flavor profile. Great beer overall.

    Thanks to John for this bottle! .. Pours a deep yellow, with good foam .. . smell of light funk, lemon, light fruit skins, and brett .. . starts with a touch of light sweetness, then brett and funk, very very clean stuff.. for a first time gueuze from an american brewery- amazing stuff and very enjoyable.. really wish i had a few more to open up in the future, a great beer! .. . Why did the clown cross the road? to rob the kwikee mart..

    Another New Glarus from pfoxyjohn. Clear bright golden pour with a cola-like fizzy head which quickly disappears leaving no lacing. Funky sour apple aroma with a slight vinegar. Taste is tangy tart with a slightly sweet/mostly sour flavor of apple vinegar and some sugar and yeasts. Wow. Big flavor - thanks John for this tangy treat.
