It started with a Brett Saison which aged in wood for 3 months, blended it with 400 litres of organic wine must. We let it all macerate together for an additional 4 months in stainless steel while it completely transformed from 2 very different drinks into one harmonious blend ready for your tastebuds. This one is a lot less wine forward than most of our hybrid releases and has a dry rose finish.
