Sunfish was originally brewed as an “informal crowd funder” for our solar panel installation. We loved the beer so much, we decided to keep it going! The base saison is brewed with Ohio wildflower honey, Ohio spelt and barley. After barrel aging for 3-6 months, it is blended back into the tank, dry hopped, and blended with a small portion of “acid beer” in order to emphasize a brighter flavor. It’s then bottle conditioned for at least two months before release.
