Bottled (thanks after4ever!). Amber colour, small slightly off-white head. Aroma is spices, yeast, some herbs and mild maltyness. Flavour is spices, some mild fruityness, alcohol as well as some maltyness.

Sampled on tap on 2/14/2011 at the Beer Revolution De Proef event. Reportedly the 2nd and final batch made. This Belgian Strong Ale pours a slightly hazy medium orange gold color from the tap. Medium to large sized white foamy head with nice lacing and decent retention. The aroma is fruity and sweet, pineapple (tropical), must, touch of barnyard and yeasty. A medium bodied Belgian Strong Ale. The malts are fruity and sweet, pineapple, peaches and apricots. The hops are herbal and earthy. Nice lively carbonation. Kind of yeasty and bretty, but the brett is neither that funky/barnyardy or really dry. Very nice soft carbonation. There is a nice balance between the fruit, brett and yeast. For a sweeter beer this is one you could drink a whole lot of. Mouthfeel is full and round, nearly chewy. The finish is clean and dry. The dryness tends to linger. The aftertaste is slightly sweet and a touch funky.

A big fan of funky sour brews here, I am. However, this was a let down, just didn’t meld together well. The pour was a pale-ish amber type color, decent head, good pop upon bottle opening. The aroma was off horse urine, some citrus notes, hay, not working too well. The flavor was citrus, horse blanket, fruity elements, yeast, and then some just odd off funk, horse urine-ish. Man, this was a bad funk, just not good, lactic and sour notes falling to the background of major distractions. Reminded me of a De Proef Primitive Ale gone terribly bad.

Such a great beer, light funk and pure bliss in the mouth, stop reading this- just find it and guzzle.. . Pete 'Dead Meat' Thompson is dead. So is Mo Green, Tataglia, Barzini, the heads of all the five families. It is at moments like these, my dear friends, that we must ask ourselves: "How can this not be part of some larger plan?" Do good men like Dead Meat Thompson just blink out one day like a bad bulb? I mean, one minute you're in bed with a knockout gal... or guy, and the next, you're a compost heap. Doesn't that bother any of you? Because it scares the living piss outta me!

Peaches, pineapples, oats and dry wheat are all detected in a great aroma. Cloudy orange pour with a filmy white head and heavy lacing. Sour, tart and sweet all rolled into one. This beer seemed lighter in body. Apricot, peaches and grapefruit flavors balanced by wheat and grass. A peppery noble hop presence could be found. Tart and funky, but not over the top. A real nice beer and middle of the road as far as the sourness.

Pours dark copper with dense, creamy head; thick sheets of lacing remained on my glass as I sipped it down. The aroma boasts sweet grain toppled over by big barnyard funk. I liked it a lot, but I could see it being overwhelming to many. Flavor is hearty malt and citrus-sourness. Amazing mouthfeel combines a medium body, creaminess, and effervescent carbonation. Complex and creative: a great sampler.

Sampled from bottle. Pours cloudy dark copper with a creamy white head and abundant lacing. Brett-dominant aroma and flavor with fruit, leather, pepper and strong barnyard. Barnyard is really bold - a bit more fecal flavor and this one would not be well-suited to my palate. Balanced. Very creamy and smooth medium-bodied ale. Try it if you dig the funk.

750ml bottle. Pours a hazy golden orange with a huge rocky white head that retains well and laces the glass.
The aroma is sweet sugary melon and spicy peppery bretty yeast.
The flavor is the same - sweet sugary melon and musty yeast with a nice spicy brett finish that has some subtle hop bitterness for a dry finish. As it warms some tart sour notes come out as well. The mouthfeel is medium bodied with low carbonation and is a bit watery.
Overall, this is brett done well. It's a nice balance of the sweet fruits and the spice and brett. -

Bottle: Poured a cloudy dirty yellow color ale with a huge foamy head with great retention and some great lacing. Aroma consists of dirty barnyard with a lightly tart aftertaste. Taste is mix between some funky barnyard taste with notes of oak and tartness. Body is full with great carbonation and no alcohol was discernable. Very well done overall with great presence of Brett notes; some additional dry hops would have improved this (already) great beer.

A careful hand over the cork after I pull off the cage saves the cork from exploding out of the bottle. A careful pour still yields an almost four-finger thick, fluffy textured, tightly beaded, off-white colored head. As I am pouring this interesting aromatic notes of apples, woody pepper and cured leather are noticeable. The beer is a hazy, amber color that shows a bright, fairly clear, orange-tinted, gold color when held up to the light. The head, as it slowly recedes forms a very variegated surface and clings with chunky lacing patterns to the sides of my glass. The nose is quite complex and quite funky; there are lots of woody, musty, slightly moldy notes here, ample black pepper, a funky farmhouse cheesiness, a sharp almost curing plastic like note in the finish, some dusty grain aromatics as well as some funky, butyric acid, barnyard character that is a mix of old animal sweat and musk.The flavor has a very soft sweetness to it up front that makes me think of pears and a ripe, musky melon. The beer gets pretty dry towards the finish, though it never loses the fruitiness, which even lingers on in the long finish. The finish also has a phenolic, cured plastic note to it that is not expressive enough to be detracting and instead just adds to the complexity of this brew. Soft flavors of orange blossom tea, honey-like malt, a touch of peach, sweet-young pickled ginger, a soft-sometimes noticeable vegetal note in the finish, as well as some savory notes of sage, hints of rosemary and turpene rich-yet-subtle clove. A prickly carbonation adds a peppery carbonic bite that helps to clean the palate a bit. The texture of this is quite nice, light enough to be amply quaffable, yet with enough presence to carry the complex flavors.
A second pour of this beer has me working through the thick head to get to the beer beneath and the head is quite creamy textured and fluffy. This is just fantastically complex and funky, it perhaps loses a bit in pure drinkability, but damn if it isn't a nuanced, engaging, contemplative brew that I would b hard pressed to honestly ask more of. The aroma comes off a touch harsher than the flavor does, but both really work, especially if you like the challenge of variable, untamed, Brettanomyces funk. This is going to get increasingly more funky, likely a bit more sour and certainly I need to get more of this to age. Comparatively to the fresh Signature, this beer is more complex, more funky, but not as easily drinkable and smoothly hoppy as the Signature. 'Still I would be hard pressed to choose between the two on any given night (if I am craving hops though (a definite weakness of mine) then I would reach for fresh Signature.
