Hefeweizen is the only top-fermented beer from the Leopold Brothers' cellar. The yeast used in this beer is a special variety which imparts a clove-like aroma, coupled with a banana-like flavor. Many other strong flavors can be found in this beer, and the discriminating drinker will slowly find vanilla, pear, raisin, and apple undertones as it slowly matures in its cask. Some Americans mistakenly put a lemon in this beer, but this is a near treasonous act in Germany as well as in the Leopold Brothers' Brewery. This beer stands on its own
