I have been pushing back Grimoire beers to rate for a while. Most seem to have the infection notes in them. After all these years, this one must be better I assume ? Beautiful dark brown colour, big beige head, good stays topping the brew. Then, big cocoa powder nose which seems great at that point. Then, bam !! Infection notes. In the nose, but more showing in the taste. Some sourness which does not belong there. Vegetable finish. You have been doing this beer for so long. How can this simple chocolate stout not just taste like roasted malts and cocoa ?!??! Maybe it just the hops you are using in here, but something is way off.

Sample at the Mondiale 2005: Poured a pitch black color stout with no head or carbonation. Aroma is comprised of slightly roasted malt. Taste is quite deceiving with some roasted malt but generally overpowered by a watery aftertaste and a thin body. Not something I would be looking for again.
