This IPA has more in common with its Trappist cousins than with the face shredding IPA’s of the west coast. While we still have a healthy bitter backbone and floral hop notes, this IPA is decidedly malty and complex with the addition of our Belgian yeast. It’s the thinkin’ man’s IPA. I made it (slowly) through a six pack I picked up in Texas a couple of months ago. Coriander and pepper spices combine with grassy hops in the aroma. The flavor is more Belgian than IPA. The hops flavor is understated (or overshadowed by spicy-yeastiness). Light-bodied with strong, effervescent carbonation. A perfectly drinkable beer, nothing special.
