La Souris (The Mouse) is a hoppy Saison, an old-school farmhouse ale brewed with malted barley, rolled oats and generous amounts of the noble-esque Celeia hop cultivar. It's floral, fruity, spicy and refreshing with a fabulous bouquet. From the Saison Wiki: Historically, saisons did not share identifiable characteristics to pin them down as a style, but rather were a group of refreshing summer ales. Each farm brewer would make his own distinctive version.
