Fingy Pudding is a Quad, decoction mashed with Ameretti biscuits & roasted chestnuts. We added buckwheat honey, fig jam and candi sugar at knockout. Tawny Port steamed figs and dates kick started a secondary fermentation and we later finished the beer with a black truffle cocoa tea. The beer is called Fingy Pudding because we cut ourselves once during the chestnut prep and once during the fig/date prep.
