Saison de Walt is produced using a split fermentation with part taking place in a modern stainless steel fermenter with a Saison yeast strain, and part spending a couple of months in a wine barrel to be further conditioned by wild yeast strain Brettanomyces, lending a classic earthy, complex and sometimes almost smoky aroma and flavor. The two are then blended and Styrian Goldings hops, inspired by Walt’s favorite beer, Orval, are added. The Saison yeast produces a very dry beer with lightly fruity and peppery flavors which are enhanced by the addition of pink peppercorns in the brew kettle. This blends with the earthy Styrian Golding hops and barrel aged “wild” beer to make a subtle, yet complex ale that is light straw in color and very easy to drink. I hope every time we enjoy one we will be filled with fond memories and fun stories about the legendary inspiration behind it. 2020 GABF Bronze Medal

We're coming up on Walt Appreciation Day (the 20th anniversary of Walt joining ratebeer, March 28th). Thought I'd slide my old rating in here to help me remember the good times. Cheers to Walt!....I saw this was available and heading over right away and giving it several tries was a no brainer. I finally met Walt in person at the last gabf I attended 2012 (my first gabf) at Falling rock along with markwise. My first gabf and finally meeting and talking with Walt for about 20 minutes was one of the highlight of the week for me. Cheers to you Walt! The saison pours with a pale gold body that has a slight haze and supports a nice looking bright white head. The aroma offers up plenty of saison like yeasty spices, more yeasty notes and then floral hops and fruity red apple around the edges. The taste smooth and crisp and light and punchy and pretty much everything I enjoy about a saison. It delivers modest yeasty spices and a little bit of fruitiness that’s kind of snappy and not really overly sweet. It then gets into floral hops and a bit of a flowery note as well as soft yeastiness. I love how light and crisp this is with just the right depth and richness.
