We bought an open fermenter a while ago from Half Pints Brewing, (those guys are swell!) We ran a classic saison wort into it, and open fermented the beer with our house culture. We then aged it in neutral oak barrels for a few months to allow the culture to develop in acidity and character.? ? This beer's idea is a classic mixed culture, open fermented saison, showing a strong mixed culture character: tart, fruity, and slightly hoppy. The recipe is filled with all sorts of raw grains and we didn't shy away on the hopping so you can taste some of the rustic herbal/hay like hop character. An exciting addition to our one year celebration, a beer that's as complex as it is drinkable.? ? Malt: Pilsner, Munich, Raw Wheat, Rye, Oats, Cara-pils? Hops: Saaz, Magnum?
