We aged our sake yeast saison in red wine barrels for 8 months. The result is a complex combination of oak, red wine, and fruitiness with a hint of Mistral hops. Brettanomyces was added to a select barrel and blended in for an extra dimension of complexity. Dry, crisp, and easy drinking yet extremely flavorful.
