A story of 2 barrels. One, a former Kentucky Bourbon barrel-turned-sour solera which provided us with the decidedly sour yet complex Opus One. The second barrel is an American Oak used for Californian Chardonnay. We filled this chard barrel with a balanced Saison and added Escarpment Labs (Guelph) Brett B culture for character and depth. After 9 months in the barrel, and 3 months bottle conditioning - Opus 2 is here. After carefully blending and tasting, we hope you enjoy this light, crisp and complex blend.
