This beer is an unfiltered dark wheat brew. The combination of specialty malt adds to its flavor and color. Munich malt is a light roasted barley that adds flavor as well as body. Chocolate malt is malt that is roasted in a kiln until it is dark and gives off chocolate characteristics. Wheat is also used for flavor as well as body. The proteins in wheat add to the haze of a traditional wheat beer. The combination of these malts give a hint of toffee and chocolate, as well as its dark color. The barley is brewed using a temperature controlled step mash. In doing this we utilize the proteins and enzymes necessary to convert sugars for fermentation. This beer is delicately hopped with tettnang hops for light bitterness. This variety is traditionally used in Germany and is well established in the United States and known for its fine aromas and slightly spicy bitterness. Perle hops are added at the end of the boil for a pleasant aroma. This hop variety is also established in the United States. The yeast in this brew is a Belgian ale yeast, which is a top fermenting yeast. It ferments at warmer temperatures and has clove and banana characteristics. This beer is unfiltered so the yeast is left in suspension for additional bottle conditioning. The water for this beer comes from a fresh water aquifer which is some of the best water in the world for brewing beer. Nothing is added to the water, it has all of the minerals necessary to brew great beer.

The worst beer in the sampler for me. I've had a few other dunkel weizens (most being pretty tasty) before but none as bad as this. Malty aroma and flavor but there's something not right in the taste (perhaps a little metallic and skunky). Would not recommend any of the offerings from this brewery.

Another crappy beer i tried today. pours a dull, lifeless straw yellow coloured body with a small creamy off white head. Taste is soft with hints of grain, lemon and green beans. Noticeable metallicy mouthfeel, thin and useless. I thought this was a dissapointing beer.
