Your next specialty beer is from the group of farmhouse ales called saisons, produced in the French-speaking region of Belgium called Wallonia. French for “season”, saisons were traditionally produced for the late summer harvest season as a refreshing source of potable water for the farm workers. My recipe is a straightforward pilsner malt base with just a little wheat malt to showcase the flavor esters produced by the yeast. You will notice it is fairly cloudy, there is still yeast in this unfiltered beer and it lends a dry dustiness to the palate. The flavor and aroma consists of fruitiness, such as pear and apricot, some floral notes, as well as some mild peppery spiciness. Sanctuary Saison is a dry beer with little residual sweetness, so expect this one to be easy to drink and refreshing on these hot summer days.
