ROYAL WEISS Vores brygmestre har ladet sig inspirere af den belgiske og tyske hvedeølstradition i udviklingen af Royal Weiss. En frugtagtig, aromatisk og ufiltreret øl brygget med overgær og fire forskellige malttyper, deriblandt selvfølgelig hvedemalt samt vores specialudviklede Royal malt. Vi er stolte af at præsentere Danmarks nye hvedeøl. OVERGÆR VS. UNDERGÆR Forskellen på over- og undergær er genetisk (kan vel sammenlignes med forskellen på asiatisk, arisk, arabisk osv - i bund og grund det samme, men med en lidt anden farve). Hos gæren kommer det bla. til udtryk i den måde gæren opfører sig på når gæringen er slut - overgær lægger sig i/på overfladen, mens undergær synker til bunds. Overgæren kan dog lokkes til at synke til bunds ved at køle væsken, hvorfor vi godt kan anvende gæren i vores lukkede beholdere. Overgæren er endvidere mere temperaturresistent og gæring med overgær foregår typisk ved 20-25°C mod undergærens 11-15°C. Overgæren afsætter også et anderledes aromabillede i øllet end undergæren, hvilket til dels skyldes temperaturforskellen under gæringen, men selv ved samme temperatur vil den typiske overgær tilføre en mere frugtagtig og phenolholdig aroma. Endelig er der en akademisk interessant forskel i og med at undergæren er i stand til at omsætte melibiose (et tri-saccharid), mens overgæren ikke har denne evne.

the head was extremely heavy and lasted what seemed to be forever- when it did settle it left fine laces, the color is cloudy faint yellow, the aroma is fat hops with a bitter trace and some dry/fruit, the feel is quite carbonated and very broad, the taste is thick yet quite narrow in its nuances, which is disappointing; there's no fruit in the taste whatsoever, so it all adds up to a bit of a dense, fat and highly carbonated beer with too much breadth and wheaty body

Canned ABV 4.6% (thanks faroeviking). Hazy golden colour, mediumsized white head. Aroma is wheat, caramel malts, fruits. Flavour is wheat, slight caramel malts and some slight fruityness. Aftertaste is mainly fruits and wheat.
