Our award-winning rendition of the Imperial Stout style, once made exclusively for Catherin the Great. We use three mashes to brew each batch of this beer, achieving a luscious deep dark chocolate flavor through a blend of specially roasted malts. We brew it every year for the winter season. It is delicious when newly bottled, but also ages beautifully for years.

The beer poured black with no head. The aroma was roasted malt, some coffee hints, dark cocoa, and some slight cherryish hints. The mouthfeel was smooth, full-bodied, and very little carbonation. The flavour was malty, chocolatey, with a little bit of hoppy bitterness.

2007 vintage. Rated and consumed 01/12/07. Pours deep dark darkness with brown mocha head with tan-ish color swirls. The aroma has alcohol phenols running underneath a bold roasted, burnt, and chocolate maltiness along with dark roasted coffee grounds and a hint of molasses. The creamy velvety mouth feel coats everything with roasted malts and rich dark chocolate. Yum. Then I get burnt malts mixed with coffee, mild sweet molasses and vanilla. This is darn good but the alcohol is just above noticeable but not at all distracting. It could use some time but really makes for a nice treat right now. I wish I had the patients to age some of these but they just taste too good. On draft - Stogies and Stouts at Dunedin Brewery 02/08/07. 2006 vintage. Black pour with creamy thin light brown head. The aroma is light with hints of its hidden ABV, light fruitiness and maybe some sweet malts. Yum, this beer has a sweet date, cherry, plum and even raisin Barleywine edge to it. Goes very well with the chocolate malts, caramel and light burnt notes that kick in about midway and usher you to the finish. Again, YUMM!

The pour is solid black, some nice viscosity, and a dark brown creamy head which lasts a long time and leaves some nice lacing. The aroma is roasted malt, some hints of dark chocolate and black licorice, and some coffee. Mouthfeel is thick and creamy. The taste is dark bitter chocolate with some vanilla sweetness thrown in. The finish is very very bitter.

330 ml capped bottle. Poured in a snifter an unfiltered and opaque dark, dark-brown, close to black, coloured I S with a small one finger creamy and tan foamy head that had a short retention and tons of micro bubbles. Low carbonation. Some lacing. The aroma is dark chocolate, a pronounced alcoholic feeling, dark riped fruits, plums, raisins, roasted coffee beans, roasted malts. The flavour is dark chocolate, burnt coffee beans, roasted and burnt malts, fruity, plums, raisins, redcurrant and spicy with vanilla and licorice. The mouthfeel is creamy, light sparkling, fulled, light ashy and smooth. The texture is oily. This full bodied B I S has a lingering roasted malts, riped fruits and ashy finish. A high flavoured and tasty B I S. The lovely tasting leads to an imperial moreish need.

Boy howdy this sure had a great aroma and poured black.with a brown creamy head. The mouth feel was pretty thick. The taste is very balanced of chocolate and dark roasted malt.

Sampled on tap at Rustico. Pours black with a thin ring of head skirting the glass. Smoke and chocolate dominate the aroma, alcohol also notable. Rich, but a little a little strong. Still loved it overall. Fine ale in a tough category.

Pitch black with small light brown foam head. Aroma is coffee. Taste is bitter cold chocolate and coffee. Long staying aftertaste, more and more bitter. (Houston 201310)

December 2013 bottle, aged a couple of extra months. Huge chocolate nose, lighter on roast than I expected, sweet forward. Flavor is big, chocolate, boozy, tootsie rolls and roast barley. Reminded me of BCS without all that bourbon. Top shelf beer.

Bottle winter 09-10. Pours thick and black. A small dark tan head vanishes quickly to a slick ring. Leaves no lacing. Smells of dark chocolate, cocoa and burnt coffee. Flavour is sweet to start, then tastes as the aroma plus a hint of dark fruits. Bitter boozy finish. Thick and sticky mouthfeel. Good beer but would have been better as a desert not breakfast.

Winter 11-12 batch. With a year in the dungeon to break it's will, we drink. Black with brown highlights. Greasy tan head. Nose of Licorice, burnt oreos, & booze. Tastes of bitter burnt toast, charred marshmallows, & dusty soot. More bittersweet/sharp char. Moderate, but soft, carbonation. Dry finish. Still boozy, still solid. Update 4/13 - Noticeable smokiness. More meaty then sooty.
