Pour célébrer notre 35e anniversaire, nous avons décidé de brasser une Double New England IPA en laissant nos buveurs choisir les ingrédients. Le choix des céréales s'est arrêté sur du pilsner québécois de chez Malterie Caux-Laflamme, ainsi que sur de l'avoine et de l'épeautre pour apporter de la rondeur. Du côté de la levure, le grand gagnant a été une levure anglaise bien expressive, tandis que les houblons sélectionnés sont le Citra, le Mosaic et le Simcoe.

    Lightly hazed at first, golden colour with an amber hue. Big frothy, bubbly white head, good retention and foamy lacing streaks. Grassy aromas with alcoholic nose, with some citrus notes and the oats to blend some mild sweetness. The alcohol seems well-hidden in the taste, not warming too much, but some bitterness is felt. Citrus-herbal flavours with a nice juicy mouthfeel, not too much dryness. Orange zest lingers on the tongue. Gets hazier as it pours with particles. A good Double NEIPA with lots of hoppiness, but still enough juiciness to enjoy.
