Fous Alliés is based on a classic, refreshing and snappy saison style, with an intriguing fruit twist. Fous Alliés underwent a secondary fermentation with the addition of organic mango juice, then even more mango juice was added to more fully capture the true fruit essence. Tasting Notes Expect tropical fruit aroma with peppery notes; the flavour is also fruity and faintly tart, with a pleasant, dry finish. Lively carbonation and hints of white pepper accentuate the quaffable character. Delicious mango flavour adds complexity, slight earthiness, and playfulness to the to the presentation. Food Pairings Ceviche, pad thai, classic Belgian frites, or any soft, creamy cheeses such as cammenbert, or brie, e.g. brie baked with cranberry. Had a 600ml bottle with Chopz at Pub Italia. Poured a fairly thin layer of creamy head. Has a light golden colour and a cloudy/hazy appearance. Looks like a bit of a pulpy cloud inside glass, leftover mangoes I suppose ha! Aromas of mild mango as well as some citrus notes. Mango flavours are quite apparent. A bit wheaty and malty. Something feels a bit off to me, maybe mangoes used weren't quite fresh enough. No clue but somewhat of a turn off of flavour. A bit of a yeasty feel on the palate. Some tartiness to it. Weird flavour aftertaste, cannot pinpoint?! A bit disappointed with this one. But glad to have tried, because of the ltd quantities.

Shared with PaleAleRider at Pub Italia in Ottawa, ON. Written on front label, packaged MAY 23, No. 1295. Pours a hazy golden-amber colour with a white foamy head, average retention and minimal lacing. Also noticed mild mango pulp after the last pour. Fruity aromas (mango, passion fruit) with some sweet grain malt and peppery yeast. Notes of honey does come out as it warms up. Medium-bodied and wet with a little stickiness and a dry finish. The fruit is much milder in the taste. More Belgian yeast, light hop bitterness, cereal malts with hints of mint. Seems like a nice blend between a witbier and a fruit beer. Quite interesting collaboration with Le Trou du Diable brewery.
