A beer inspired by the national beverage of Japan, we brewed this refreshing sake lager with organic rice added to the mixture of barley malts, and then cold-aged it on oak stars that had been soaked in sake. Kana! History & Style Sake makes an apt accompaniment to its fellow fermented beverage made from grain, biru (beer in Japanese!) The clean presentation of a traditional lager provides the perfect backdrop for the subtle fruit and wine-like character imparted by the accents of rice and sake. The label art features Japanese macaques taking a break from the cold winter with a warm up in a natural hot spring. Three very wise monkeys indeed. Tasting Notes Do No Evil pours brilliant gold with a dense white foam. The aroma expresses white grape, lychee and cereal grain. The flavour imparts tannin and sweet fruit notes with a firm but balanced bitterness. The finish presents refreshing white pepper notes. INGREDIENTS Local spring water, organic barley malts, organic rice, organic hops, brewer's yeast. MALTS Pilsner, carafoam, acidulated (all organic) HOPS Organic sterling YEAST Copenhagen lager yeast

Enjoyed at the Atomic Rooster. Pours a clean golden colour with a small white cap and light lacing. Grainy tasting with the cereal notes and hints of grapes. The rice smooth things out and the cereal lingers. Crisp mouthfeel and refreshing. Aromas are grainy with the rice in the background. If you like a Kölsch, you might like this as just a little different, but the same vein for the graininess.
