Of all the rebrew requests we get, TRUMBO is responsible for the lion’s share. It’s surprising because with a relatively clean malt profile and characteristics usually associated with classic West Coast beers, this isn’t a DIPA that ticks the usual hype boxes – proof, in case it was needed, that there is demand out there for more classic flavour profiles. For the latest batch of this 8% beer (which we only brew once a year in Autumn) we’ve upped the quantity of hops and altered our dry hopping schedule a little, with huge additions of Amarillo, Mosaic and Simcoe. The result is a bumbling behemoth of a beer with chewy, biscuity body and jammy, overripe flavours of melon, blueberry, mango and orange marmalade. Blink and you’ll miss it.
