The first key to a great Double IPA is dryness of character despite the high original gravity. This is accomplished, foremost, through high attenuation by the yeast during fermentation. We aim for an apparent attenuation around 85% which yields relative dryness and alcohol strength. The second key is a fantastic and powerful hop aroma. This we achieve by dry hopping Suruga Bay Imperial IPA with several varieties of pungently strong American hops. We conduct this dry hopping not once but twice, in two separate tanks. Then, at packaging, to ensue a vigorous secondary fermentation and natural carbonation, we krauesen Suruga Bay with a percentage of peak fermentation beer from a different batch. Suruga Bay Imperial IPA is a wickedly compelling flavor experience. Its hop character is as rich as Japan’s Suruga Bay is deep (it is Japan’s deepest bay and Baird Brewing is located on its inner shore). The greatness of Suruga Bay Imperial IPA resides in a supreme drinkability that pervades in spite of the potency.

On tap, 300 ml, at Nisha Craft Beer Bar in Vilnius, Lt. Poured an unfiltered and opaque chesnut-amber coloured I IPA with a short one finger light beige foamy head that had a very long retention and tons of micro bubbles. Low carbonation. Good lacing. The aroma is deep tropical fruits, spicy, nutmeg, cinnamom on a solid malty backbone and piney hops. The flavour is flowery, roses petals, biscuity malts, fruity, mango, grapefruits, pineapples, apricots and grapes, pines and resinous hops. The mouthfeel is creamy, thick and smooth.The texture is oily. This full bodied IPA has a lingering deep fruits finish on a well marked ABV. A slowing bewitching I IPA from Japan.

PINT tasting. Good hoppy aroma, somligh citrus notes. Lasting, lacing off-white foam. Strong bitter taste, lasting quite long during aftertaste. Great beer. (Arnhem 201512)

Odd sized bottle (360ml) from Central City, and not inexpensive at $5.20. Cloudy pour of orange 'neath a creamy beige head. Citrus and pine for the aroma. Mouthfeel just above average. Citrus and pine foremost in the flavour, some alcohol as well. Average bitterness, no suggestion of any malt. More like a good IPA rather than a DIPA, but still nice enough.

Glowing brown beer with limited cap, nice lacing though. Aroma is good, tangerine, flowery alcohol, mild wood. Taste isn’t as strong as aroma but still ok. Bitter, wood, pine, and citrus. The malts are fairly thin and unbalanced. Good beer I would drink again, but I’ll probably forget about it in a week or two.
