This is as traditional as it gets. We use all German malt: Vienna, Munich, and CaraMunich. For hops we use the traditional Oktoberfest hops: German Tettnang and Czech Saaz. We use a Bavarian lager yeast and allow the beer to lager for over 2 months. It is unfiltered, yet pretty clear due to the extended lagering time, just the way it used to be.
