WOAH, remember Wren House? Like 4+ years ago? That’s when we first made this beer. Just a good ol big American DIPA. Pils malt, crystal malt, teeny touch of flaked oats. Look at that color! It’s got hues of orange/amber, nice. Loaded up with simcoe at the very beginning of the boil, before the wort even comes to a boil really, we call this a first wort hop. Then it boils for awhile and once it’s done we send a ton of simcoe’s younger sibling mosaic into the whirlpool. Fermented low and slow with a blend of American and English yeast strains. Post ferm we dry hopped moderately with Citra, Cascade, Simcoe. A nice combo for this beer. It’s a little fruity, a touch piney, some niiiice citrus peel, and just classic (like really classic) west coast dankness.
