Inland Island offered to send us a fresh pitch of Voss Kveik and we jumped at the chance to use it in our small IPA format. Kveik yeast comes by way of farmhouse brewers in Norway, it’s an insanely resilient strain that can ferment well over 100 degrees. We mashed in a small grain bill of Pilsner malt and @grainrandd malted Sonora white wheat. Hopped lightly in the whirlpool with Loral Cryo hops, and dry hopped moderately with the same. Fermented without temperature control up into the low 100’s. This is the most citrus character we’ve ever experienced in our IPA program! Huge grapefruit and spritzy lime dominate the aroma and flavor. Soft mouthfeel, moderate carbonation, immensely drinkable.
