Beer is an ancient thing, going as far back as Sumeria. Once upon a time, malt was dried over open flame. The smoke from the fire imparted a smokey flavor and aroma to the malt and therefore to the beer. Then came the 18th century, and with it industrialization, and the use of kilns to dry malts.
