Ours is a classic pilsner with a perfect balance of subtle sweetness and velvety bitterness wrapped in a crisp body. Pilsner needs a big head and should froth over the top of the glass to give you a better sniff. Pour this boar liberally, allowing the golden bubbles to form an inch or so of foam on top. Waterloo Pilsner goes extremely well with seafood. Its slight edge of bitterness essentially kick-starts the palate, allowing the fresh flavours of your catch, however subtle, to be thoroughly enjoyed. Fish and chips or calamari are equally suited. The beer scrubs through the deep-fried goodness, allowing the fish and squid to come out and play.

473ml can: Pours a clear gold with a 2 finger puffy cap which reduce to a surface foam that laces the glass. Fairly well carbonated. Aroma is faint good bready malts and some northern brewer hops. Flavour is lightly malty with decent hop bittering to balance…fast clean dry finish. A serviceable all gristed malt Canadian premium Pilsner – certainly thinner and not as good as their founder’s Pilsner but better than the brick has brewed for a long while.

Part of the Waterloo 2013 Spring pack at the LCBO. Pours a yellow straw colour with a foamy white head that gives out dirty lacing. Mild cereal grain malt nose with just a tad of Saaz hop. The hop appears a little more in the taste, adding a spicy bite to it at the start and finishing on the malt, lingering a bit. Nice crisp, medium-bodied brew that is pretty refreshing. Quite a nice Canadian pilsner, that does not have the rusty hop that most European Pils have.
