The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

This poured a very pale yellow to white with absolutely no head. The aroma is a persimmon I guess. Since I had to ask what that was I will try to relate it to more common fruits. So aroma is lemons and pineapples with some herbal notes. The flavor is lemons, pineapple, and pears. This is sour but not overly so. If you are in a beer rut, this would be a good way to have something totally different. Overall a nice one.
