Loosely based on an iconic style pioneered in those densely wooded north eastern states, this DIPA features Simcoe, Centennial, Mosaic, and Amarillo. This particular beer was inspired by what to us always felt like the bone structure of a West Coast DIPA but adorned with various techniques to bolster both yeast and fruit forward hop character. With this comes less emphasis on pure hop bitterness and resin to counterbalance caramel malt sweetness. Origins, constructed of a super simple grist of North American 2 Row and Malted Wheat, was fermented with a carefully selected expressive ale strain to slightly higher levels of both dryness and yeast aromatics that blend seamlessly with hop character from some of our favorite varietals.
