Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans® Oude Gueuze’s special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans® Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years. Taste-wise … Discovering the world of the Brettanomyces, the name given to the spontaneously fermenting wild yeast at the heart of the legendary lambics of the Senne Valley, is a fascinating experience. This little marvel of bitter flavour will win you over by its subtlety of taste in which lambic never means sourness. A wild and fresh aroma is combined with a completely emancipated taste from the very first sip, leaving a flavour of authenticity on the palate while maintaining all the mystery of the Brussels gueuzes.

Pours hazy apricot with a golden-buff head. Sour pear dominates the aroma. Flavor is mainly sour pear with a snip of apple and a snip of malt. Mouthfeel presents weak body but lively fizz.

Clear sparkling yellow with small white foam ring. Aroma is quite sour, sour apples . Taste enormous fresh, quite sour to. Long lasting sour aftertaste. You have to get used to this, but it is OK. (Velp 201309)

This was ok. I've come around on the style. This had no faults but also nothing that stood out. Lightly sour, acidic...lemons and olive but light and prickly on the palate.

Pours a hazy yellow color, thick fluffy cap at first but it dosent stick around long.The lace is almost non-existent. The aroma of the very cold beer is still showcasing the funk and it seems to be giving me mostly lemon as anything right now. As it is sitting a little bit, you can pick up some sweetness, green apple, and wet-straw aromatics that make a gueuze nice, but there is a little bit of cardboard. The flavor is pretty much in line with the aroma, there is plenty of lemon in the flavor, and salt. As the beer warms, it is getting a little more funky, but that never really takes off. The mouthfeel is light, but it is pretty heavy for this style. Not the most complex or layered Gueuze, but is has an enjoyable sourness to it with some nice fruit character.
